Spokane, here we come

Well, this will probably be our last post before we get to Spokane. So it’ll be like 40 hours, or something.

So if we get too busy, Happy mother’s day and Happy anniversary (ours is next Monday).

Domesticity

Rick & I spend too much money on food. I don’t think we really overspend on most things in general, but we love our food. I’m attempting to be more frugal and a good, domestic wife, and I know that my sister plans meals an entire month in advance so that her grocery shopping can be very specific, minimalizing the amount of wasted food in the fridge. I actually enjoy cooking and making up new recipes (I’ve come up with some yummy new ideas recently), so I should turn it into a real, active hobby that’ll save us some money in the process.

I know that lentil soup may not sound great to a lot of people, but I think it’s really yummy, and OH SO CHEAP, and easy to make! I made it for the first time this last week and Rick and I really enjoyed it. The recipe made two full dinners and a couple lunches/snacks as well.

I also made up this pasta thingy (I know pasta isn’t always the healthiest of foods, but it is cheap) with italian herb chicken & fresh diced tomatoes & chopped onion. It’s really good, and I want to try it with shrimp & a garlic butter sauce sometime soon.

My latest attempt was making fried chicken sandwiches. They were so good! I’m sure they weren’t healthy, but I guess that’s kinda low on my list of priorities. I know. I’m bad. But I just breaded some thawed, skinless boneless chicken breasts in flour, salt & pepper, and fried them up in about 1/2 a cup of butter. I put them on sandwich buns with lettuce & mayo. Better than a fast food chicken sandwich, and Rick highly approved of it. :)

I’m currently working on a month’s worth of dinner ideas. Any suggestions?

This doesn’t count as pulling herself up to stand yet, but she’s getting closer. She doesn’t like to be restrained in her bouncy seat anymore, but she loves trying to climb onto it.

So I was checking out a book at the library, and I forgot my ID. The student librarian asks my name, and replies,

“You’re Capezza?”
“What sort of awful things did you hear?”
“I hear you’re a great teacher and that if you have a class to add, it’s yours.”
“So what do you need? I’m teaching English 090, 101, 102, and 203 next semester.”
“Don’t you teach anything besides English?”
“I teach First-Year Seminar.”
“Don’t you teach any psychology?”

So I am sitting here making waiting for one last student to come make up his test (he got in a fender bender on the way here Friday). Then I will finish grading papers for my last class. Then I have to enter grades. Then I will have 8 weeks of vacation. I can’t wait to get out of here. We’re staying with the Mattsons before flying out of Little Rock. That’s always fun. I knew Greg and Melody in college, but I didn’t really know them. It turns out they’re a ton of fun. We’ve also gotten to know a couple friend of theirs from Saint Andrews, Marcus and Shannon. I’m not sure if their night will be open, but it would be nice to see them too. I wish we could get up to St. Andrews more often. *sigh*

Why is it that I can bounce 300 lbs off my chest while benching, and it feels good, but when my 20 lb daughter puts her hand on my chest the wrong way, it hurts? It must be because she’s pulling my skin when she does it.
